ROASTED VEGGIE ORZO

This recipes uses a variety of roasted vegetables along with whole grain orzo.  Roasting the vegetables keeps all the nutrients in the vegetable rather than being leached out in water when they are boiled.

Soup is always a treat on a cold day. Here is a low sodium, low fat version of a favorite.

It’s cold outside and everyone loves a nice hot bowl of chili. Here is a healthier version.

With all of the wonderful farmer's markets, there are lots of fresh vegetables to enjoy.  Here is a recipe for Gazpacho, a cold and refreshing tomato soup.  It is packed with nutrition and is very high in lycopene.

Summertime cookouts can be very high in carbohydrates.  Carbohydrates are in the potato salad, baked beans, fruit salad and buns.  Here is a recipe that is packed with nutrition and high in fiber.  It's colorful and very tasty.

This year celebrate Cinco de Mayo with a healthy recipe using tilapia instead of ground beef.  This wrap recipe is low in carbohydrates and high in protein.  It's also easy to make.

Here's an idea for using up your leftover Easter ham instead of making split pea soup or scalloped potatoes.  Try this recipe which is lower in carbohydrates but yet still delectable.

HAPPY  ST.  PATRICK'S DAY

This is a delicious way to use leftover corned beef from St. Patrick's Day.  Make sure you use a flat cut beef brisket.  That cut has only 2.5 grams of fat per ounce.  The regular corned beef has 5.5 grams of fat per ounce. 

A  HEALTHIER  VALENTINE'S  DAY  SNACK

Try these flavorful nuts for a snack instead of chocolates.  They are high in protein and low in carbs.  And everyone knows that almonds are good for you.  Just don't eat too many!
